I feel like I've been on a bit of a roll with my nutrition lately. Cooking is not always something I make time to do, but I enjoy it and feeling pretty proud of myself for making more of an effort to make things in house. I've made these cookies a couple times. I think they're pretty good. The wife thinks they're pretty good. Even the kids eat them. The hemp seeds are a good source of omegas and magnesium (they're actually the only thing I will actually admit might be a super food). Plus I can make them low carb, high fat. Winning on all levels.
- 1 cup hemp hearts (hulled seeds)
- 1/4 cup sugar (substitute appropriate amount of sweetener for low carb)
- 2 eggs
- 1 cup peanut butter
- 1/2 tsp baking soda
- 1/4 chocolate chips (you can find sugar-free if you want)
Mix everything together. Makes just over 20 cookies if you use a level(ish) tablespoon to put the mixture onto baking sheets. In the oven for 15-20 minutes. Easy.
